Lamb and Figs in a Dutch Oven


I used to be choosing figs from a neighbor's tree. The branches hung over my fence permitting me to select these ripe black figs for breakfast this morning. After choosing a bowl, I thought of how I might eat the bountiful harvest!

I like the traditional recipe of Lamb and Prunes and thought I might substitute the prunes for figs. Figs are jam-like candy with a chewy pores and skin. They're like sweet and addicting. I hope I've sufficient for this recipe!

Lamb and Figs

deep frying pan with lid (dutch oven in case you are tenting)
2 massive onions, diced
three cloves of garlic (use as a lot as you want)
1/eight cup of olive oil
three - four lbs of boneless lamb, cubed
1 cup of hen inventory (home made is best)
1-1/2 cups of California Merlot or dry crimson wine
three Tbsp of Balsamic vinegar
bay leaves
1 heaping tsp dried mustard
1 heaping tsp floor cumin
1 heaping tsp coriander
pinch tsp cinnamon
pinch floor ginger
pinch chili flakes
salt to style
10 recent figs minimize in half
brown sugar to style (non-compulsory)
scorching rice for aspect dish


Brown onions till translucent with brown edges. Add garlic and saute collectively. Add cubes of lamb and prepare dinner at excessive warmth till meat is seared. Add hen inventory, wine, vinegar and all hte spices together with the bay leaves; convey combination to a low boil. Cowl with a lid and simmer till lamb is tender. (Approx 45 min)

Add figs and brown sugar (go simple on this one since figs are very candy). Because the combination reduces, the lamb will tackle a pleasant candy glaze. Take a look at for tenderness with a fork. Serve instantly with rice.
Serves approx 6 - eight folks.

Quickie Recipe Tip!

Facet Dish of Figs: minimize 5 figs in half and place minimize aspect down and gently sear over medium excessive warmth in olive oil, garlic and a couple of tsp of balsamic vinegar.
