Grandma's Molded Cranberry Salad

Retro recipes convey again numerous tenting recollections. Here is one which grandma at all times made for us through the vacation season. I like this tangy dish with roasted rooster or pork. Simple to pack or freeze, that is nice on a sandwich, too. Makes me consider Thanksgiving and the vacations!

three pkg Knox gelatin
three T sugar
2 pints cranberry juice cocktail
half cup water
three T lemon juice
1 ripe avocado
2 cups diced apple
2 cups finely diced celery
half cup walnuts
1 tsp salt

Combine gelatin, sugar and one cup cranberry juice. Dissolve over a low warmth. Stir in the remainder of the cranberry juice and lemon juice. Chill till syrupy. Then stir in remainder of components. Pour into molds or bowl. Retailer chilled till able to serve. Nice candy tang with roasted rooster, pork tenderloin or turkey.
