Wrap in aluminum foil or place skin-side down right into a dutch oven or heavy coated skillet. Place aluminum coated eggplant onto the grill till fork tender about 10-15 minutes. Or place dutch oven over the coals with a couple of coals on prime for about 20 minutes on medium warmth. When completed function a aspect dish with soy sauce.
One other variation is to simply wipe the entire eggplant with olive oil and roast immediately over the coals. You will notice them shrink and shrivel. When fork tender, open them up and add the remainder of the components. Add slices to a sandwich. Roasty, toasty, creamy good!
